RECIPE: Blueberry and Banana Pancakes

It’s Pancake Day today, so if you crave for a little treat but still want to keep in shape here’s a little something for you.

These blueberry and banana pancakes can be healthy (ish!) alternative for American pancakes.

You will need:

2 large bananas
1 glass of almond milk
1 medium size egg
1 tea spoon of coconut oil, and 1 tablespoon of coconut oil for frying
1 teaspoon of baking soda
200g flour
A few handfuls of blueberries

  1. Mash bananas in the bowl, add a glass of almond milk, the egg, teaspoon of coconut oil, teaspoon of baking soda and flour and stir it together.
  2. Once you have even liquid form add blueberries and stir it gently.
  3. Warm up the pan and add a tablespoon of coconut oil.
  4. Put one ladle of mixture on pan and wait until it’s fried on the one side.
  5. Turn pancake to the other side and wait until it’s fried.
  6. Repeat until the end of mixture.

Your pancakes are ready to serve.
